Brava Sauce

spanish pepper, seeded and diced |

Preparation
- Toss the potatoes, olive oil, salt and pepper then place in a single layer onto a baking sheet lined with parchment paper
- Bake in a pre-heated oven at 480℉ oven 22-23 minutes, browiling the last few minutes to brown
- Grind the garlic to a paste then beat in the egg yolk, lemon juice and sea salt
- Vigorously beat the aioli mixture 3-4 minutes till a mayonaise texture is achieved, set aside.
- Saute the garlic and spanish pepper in olive oil at medium heat for 30 seconds
- Stir in the paprika and mix well
- Add the tomato puree and season with sea salt, black pepper and a little white sugar
- Simmer the sauce till thickend or till the potatoes are done
- When potatoes are done, transfer to a shallow bowl, top with the tomato sauce and a few spoonsful of aioli
- Garnish with fresh parsley and enjoy!
