Yukon Patatas Bravas

Ingredients

Bake Potatoes

Qty Ingredient
2 ea medium yukon gold potatoes, quartered then cut into 6 pieces each
1 tbsp extra virgin Spanish olive oil
taste sea salt
taste black pepper


Garlic Aioli

Qty Ingredient
1 cup mayonnaise
2 ea cloves garlic
1 ea egg yolk
½ tsp lemon juice
½ cup extra virgin Spanish olive oil
sea salt


Brava Sauce

Qty Ingredient
1 ea clove garlic, finely minced
½ ea spanish pepper, seeded and diced
¼ tsp smoked paprika
½ cup tomato puree
sea salt
black pepper
white sugar


Extra

Qty Ingredient
pinch chopped parsley

Preparation

  1. Toss the potatoes, olive oil, salt and pepper then place in a single layer onto a baking sheet lined with parchment paper
  2. Bake in a pre-heated oven at 480℉ oven 22-23 minutes, browiling the last few minutes to brown
  3. Grind the garlic to a paste then beat in the egg yolk, lemon juice and sea salt
  4. Vigorously beat the aioli mixture 3-4 minutes till a mayonaise texture is achieved, set aside.
  5. Saute the garlic and spanish pepper in olive oil at medium heat for 30 seconds
  6. Stir in the paprika and mix well
  7. Add the tomato puree and season with sea salt, black pepper and a little white sugar
  8. Simmer the sauce till thickend or till the potatoes are done
  9. When potatoes are done, transfer to a shallow bowl, top with the tomato sauce and a few spoonsful of aioli
  10. Garnish with fresh parsley and enjoy!
