Black Bean Soup

3 cups black beans, rinsed and drained
3 ea celery ribs with leaves, chopped
1 ea large onion, chopped
1 ea medium sweet red pepper, chopped
1 ea jalapeno pepper, seeded and chopped
2 tbsp olive oil
4 ea garlic cloves, minced
1 qt TJ vegetable broth
1 can diced tomatoes, undrained
3 tsp ground cumin
1½ tsp ground coriander
1 tsp cayenne pepper
¼ tsp pepper
1 ea bay leaf
1 tsp lime juice
½ cup reduced-fat sour cream or yogurt
¼ cup chopped green onions

Preparation

  1. Saute the celery, onion, red and jalapeno pepper in the olive oil until the onions are transparent
  2. Add the garlic and saute until aromatic, 30 seconds or so
  3. Add the broth, beans, tomatoes, cumin, coriander, cayenne pepper, black pepper and bay leaf
  4. Bring to a boil then lower to a simmer about an hour or so until the beans have sufficiently softened
  5. Serve with the lime juice, a dollop of sour cream / yogurt and the chopped green onions
