Black Bean Soup

3 cups | black beans, rinsed and drained |
3 ea | celery ribs with leaves, chopped |
1 ea | large onion, chopped |
1 ea | medium sweet red pepper, chopped |
1 ea | jalapeno pepper, seeded and chopped |
2 tbsp | olive oil |
4 ea | garlic cloves, minced |
1 qt | TJ vegetable broth |
1 can | diced tomatoes, undrained |
3 tsp | ground cumin |
1½ tsp | ground coriander |
1 tsp | cayenne pepper |
¼ tsp | pepper |
1 ea | bay leaf |
1 tsp | lime juice |
½ cup | reduced-fat sour cream or yogurt |
¼ cup | chopped green onions |
Preparation
- Saute the celery, onion, red and jalapeno pepper in the olive oil until the onions are transparent
- Add the garlic and saute until aromatic, 30 seconds or so
- Add the broth, beans, tomatoes, cumin, coriander, cayenne pepper, black pepper and bay leaf
- Bring to a boil then lower to a simmer about an hour or so until the beans have sufficiently softened
- Serve with the lime juice, a dollop of sour cream / yogurt and the chopped green onions
