Green Bean, Tomato, Mozzarella Salad

Ingredients
Vinaigrette

1/4 cup | apple cider vinegar |
1 tablespoon | Dijon or whole grain mustard |
2 tablespoons | chopped, fresh basil (or 2 teaspoons dried basil) |
1 teaspoon | granulated garlic |
3/4 teaspoon | salt |
1/4 teaspoon | ground black pepper |
Salad

2 pounds | fresh green beans, stems trimmed |
1 pint | cherry or grape tomatoes |
8 ounces | fresh mozzarella |
8 oz | hard parmesan cheese |
1 ea | 7 oz jar TJ green olives |
Preparation
- Whisk the dressing ingredients together and set aside
- Blanch the green beans in boiling water for 2-3 minutes or until tender 3. place beans into a bowl of ice water to stop the cooking, drain
- Add the drained beans, tomatoes, and mozzarella to a large bowl and drizzle with dressing and toss
- Season with extra salt and pepper, if needed, before serving
