Green Bean, Tomato, Mozzarella Salad

Ingredients

Vinaigrette

Qty Ingredient
1/2 cup olive oil
1/4 cup apple cider vinegar
1 tablespoon Dijon or whole grain mustard
2 tablespoons chopped, fresh basil (or 2 teaspoons dried basil)
1 teaspoon granulated garlic
3/4 teaspoon salt
1/4 teaspoon ground black pepper

Salad

Qty Ingredient
2 pounds fresh green beans, stems trimmed
1 pint cherry or grape tomatoes
8 ounces fresh mozzarella
8 oz hard parmesan cheese
1 ea 7 oz jar TJ green olives

Preparation

  1. Whisk the dressing ingredients together and set aside
  2. Blanch the green beans in boiling water for 2-3 minutes or until tender 3. place beans into a bowl of ice water to stop the cooking, drain
  3. Add the drained beans, tomatoes, and mozzarella to a large bowl and drizzle with dressing and toss
  4. Season with extra salt and pepper, if needed, before serving
