Portuguese Sopa Verde


Ingredients for 6 large portions:

  • 2 tablespoon olive oil
  • 14 ounces Tofurkey Italian sausage
  • 1 onion diced fine, plus a pinch of salt
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 pound yukon potatoes, diced
  • 2 teaspoons salt, plus more as needed
  • 2 quarts vegetable broth or water
  • 2 pounds kale, trimmed, chopped, washed and drained

Preparation

  1. Brown the Tofurkey in the olive oil then remove
  2. Brown the onion, chili, paprika in the leftover oil till translucent
  3. Boil the potatoes and salt in the vegetable broth 15 minutes
  4. Add in the sausage, onion mixture, and kale
