Portuguese Sopa Verde
Ingredients for 6 large portions:
- 2 tablespoon olive oil
- 14 ounces Tofurkey Italian sausage
- 1 onion diced fine, plus a pinch of salt
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 pound yukon potatoes, diced
- 2 teaspoons salt, plus more as needed
- 2 quarts vegetable broth or water
- 2 pounds kale, trimmed, chopped, washed and drained
Preparation
- Brown the Tofurkey in the olive oil then remove
- Brown the onion, chili, paprika in the leftover oil till translucent
- Boil the potatoes and salt in the vegetable broth 15 minutes
- Add in the sausage, onion mixture, and kale
