Wild Mushroom Sauce

Makes 3 cups


Ingredients

Qty Ingredient
2 tbsp butter
2 tbsp flour
3 cups wild mushroom stock
3 tbsp tomato sauce
4 tbsp cream or creme fraiche (optional)
taste salt and pepper

Preparation

  1. Melt butter in sauce pan then stir in flour and cook 2 minutes
  2. Boil mushroom stock then whisk into cooled roux
  3. Stir in the tomato and cream and season with salt and pepper
  4. Simmer on low stirring frequently 20-25 minutes
