Pila di Frittatine

Omelet Flan

Ingredients

Qty Ingredient
8 ea extra large eggs
2 tbsp flour
¼ cup milk
½ tsp salt
taste freshly ground black pepper
2 tbsp each of chopped parsley, basil, chives
2 tbsp butter
1 cup grated gruyere or fontina cheese
½ cup grated parmesan cheese
1½ cup pomarola sauce
1 ea tomato, sliced
few parseley sprigs

Preparation

  1. Beat together in mixing bowl till light and frothy:
    a. eggs
    b. flour
    c. milk
    d. chopped herbs
    e. salt & pepper
  2. Cook the omelets ¼ cup and a dab of butter each over low heat
  3. Combine the gruyere or fontina and the parmesan
  4. On a buttered baking or pizza pan layer the omelets as follows:
    a. an omelet
    b. 2 tbsp pomarola sauce
    c. 2 tbsp of the cheese mixture
  5. Cover the top omelet with the reamining sauce and chees allowing it to spill over the sides
  6. Bake in preheated 350℉ oven 15 minutes till the cheese is melted and beins to brown
  7. Garnish with tomato slices and parsley sprigs
  8. Serve hot, cutting the stack like a cake
