Pappa di Pane - Bread Soup

Ingredients

¼ cup olive oil
4 ea garlic cloves, roughly chopped
6 leaves fresh or ½ tsp dried sage powder
2½ cups canned italian plum tomatoes, roughly chopped
3 cups very stale, coarse bread, cut into ½ inch cubes
5 cups vegetable broth
to taste salt and pepper


Preparation

  1. Saute garlic and sage 30 seconds
  2. Blend in tomatoes and simmer over medium heat 25 minutes, stirring occasionally
  3. Add the bread, mixing in for 3 minutes
  4. Stir in the vegetable stock and simmer 15 minutes
  5. Taste and adjust for salt and pepper
  6. Serve hot or at room temperature with extra olive oil if desired
