Pappa di Pane - Bread Soup
Ingredients

¼ cup | olive oil |
4 ea | garlic cloves, roughly chopped |
6 leaves | fresh or ½ tsp dried sage powder |
2½ cups | canned italian plum tomatoes, roughly chopped |
3 cups | very stale, coarse bread, cut into ½ inch cubes |
5 cups | vegetable broth |
to taste | salt and pepper |
Preparation
- Saute garlic and sage 30 seconds
- Blend in tomatoes and simmer over medium heat 25 minutes, stirring occasionally
- Add the bread, mixing in for 3 minutes
- Stir in the vegetable stock and simmer 15 minutes
- Taste and adjust for salt and pepper
- Serve hot or at room temperature with extra olive oil if desired
