Latkes

Ingredients

4 ea large russet potatoes
1 ea small onion
1 cup panko bread crumbs
3+ ea eggs
1 tsp salt
peanut oil


Preparation

  1. Grate potatoes and onion through largest hole on grater
  2. Wrap potato/onion mixture in clean kitchen towel and squeeze out about ½ to 1 cup water
  3. Allow water to stand about 5 minutes then slowly drain out water to leave starch
  4. Mix salt, panko bread crumbs, and potato/onion mixture in a large bowl
  5. Beat 3 eggs into drained starch and add to the potatoe mixture
  6. Mix just enough for ingredients to stick together, add another egg if needed
  7. Form into 16 balls and flatten
  8. Add ½ inch peanut oil to 12 inch fry pan and heat to about 375℉
  9. Fry latkes about 5 minutes per side till golden brown
