Grilled Eggplant Sandwiches


Ingredients

  • 1 ea large globe eggplant (about 1 lb), sliced crosswise into 1/4- inch thick rounds
  • Salt
  • 8 oz fresh mozzarella cheese, sliced into ¼ inch slices
  • 1 ea large beefsteak tomato, sliced into ¼ inch slices
  • 1 ea medium red onion, sliced into ⅛ inch slices
  • 10- 12 ea fresh basil leaves
  • ~¼ cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 2 tbsp balsamic vinegar
  • 6 ea small burger buns

Preparation

  1. Prepare a vinaigrette from the oil and vinegar and soak the tomato and onion slices
  2. Salt and Grill the eggplant rounds on high
  3. Assemble the sandwiches:
    • bun at bottom,
    • followed by 2- 3 rounds eggplant
    • add tomato slice and some red onion
    • top with 1- 2 mozzarella slices
