Shepherd's Pie
Ingredients
- extra virgin olive oil
- 1 large yellow onion, roughly chopped
- 4 cloves garlic, crushed
- 2 tbsp curry powder
- 2 tsp ground cumin
- 2 small red or green bell peppers, chopped
- 1 can 15 oz diced tomatoes
- 1 pkg 12 oz TJ fake burger crumble
- ½ cup water
- 1 ¼ lbs potatoes, halved or quartered
- ½ cup half & half
- 1 cup fresh or frozen peas
- ½ cup grated parmesan cheese
- salt and peper to taste
Preparation
- Pre-heat oven to 400°
- Boil potatoes about 15-20" till done
- Meanwhile, saute peppers and crumble about 5" in large cast iron skillet, add tomatoes and water, saute additional 20" till soft
- Brown onions, curry, cumin about 5", add garlic and brown 1" longer
- Add onion/curry mixture to pepper mixture
- Blend together boiled potatoes, parmesan and half & half
- Add peas to blended potato mixture and layer atop onion/pepper mixture in skillet
- Bake 15" then brown in broiler no more than 1 minute or so
