Garlicky Kale with White Beans

Ingredients

Qty Ingredient
2 ea 10 oz bags TJ organic tuscan kale
2 tbsp extra-virgin olive oil
4 ea medium garlic gloves, minced
2 ea 15 oz cans canneloni or other white beans, drained and rinsed
⅔ cup vegetable stock
taste salt & pepper


Preparation

  1. Bring 1 gallon water and 1 tsp salt to a boil
  2. Add the kale and simmer 8 minutes or until tender
  3. Drain well
  4. Saute the garlic and oil in a large skillet on medium till golden, about 2 minutes
  5. Add the kale and toss well till heated through
  6. Add the beans and stock and simm till heated through, about 5 minutes
  7. Add pepper to taste, serve immediately
