Red Cabbage Soup

Ingredients

1 lb TJ meatless ground beef
1 cup diced red onion (about 1/2 onion)
1 cup chopped carrot (about 3-4 carrots)
4 cloves garlic, minced
4 cups coarsely chopped red cabbage (about 1/2 standard sized)
4 cups TJ vegetable broth
2 cups water
1 ea (15 ounce) can pinto beans, rinsed and drained
1 ea (6 ounce) can tomato paste
2 tsp salt
1 tsp ground cumin
1 tsp ground black pepper

Preparation

  1. Saute the onion and carrots in olive or avocado oil until translucent, about 5 minutes
  2. Add the garlic and saute till fragrang, about 30 seconds or so
  3. Add cabbage, broth, water, pinto beans, tomato paste, salt, cumin, and pepper.
  4. Bring to a boil, then reduce the heat, cover, and simmer until the cabbage has softened substantially, about 1/2 hour.
  5. Add the meatless ground beef and simmer till heated through, about 5 minutes
  6. Enjoy!
