Choose and Prepare Peppers
Choose sleek, glossy peppers with tight smooth skins and no blemishes. Here's 3 ways to peel peppers.
Preparation
- Place peppers whole in a 475℉ oven until the skins blister, about 15 minutes. The peppers will be slightly cooked.
- Place them whole or halved in a broiler directly below the heat. If they are whole, turn them frequently, allowing the skin to blister and char all around.
- On a gas stove, spear the peppers with a long fork and roast eache pepper individually over flame, turning frequently, until the skins blister.
