Albondigas
Ingredients
- 6 carrots
- 3 small potatoes
- 1 large onion
- 2 cups medium or hot salsa
- 1 1/2 quarts broth
- 2 packages meatballs
Preparation
- Cut carrots and potatoes into spoon size chunks
- Finely chop onion
- Saute vegetables in olive oil till onions are transparent
- Add salsa and broth, simmer 20 minutes
- Add meatballs and heat till warmed through
