Albondigas


Ingredients

  • 6 carrots
  • 3 small potatoes
  • 1 large onion
  • 2 cups medium or hot salsa
  • 1 1/2 quarts broth
  • 2 packages meatballs

Preparation

  1. Cut carrots and potatoes into spoon size chunks
  2. Finely chop onion
  3. Saute vegetables in olive oil till onions are transparent
  4. Add salsa and broth, simmer 20 minutes
  5. Add meatballs and heat till warmed through
