West African Sweet Potato Soup

Ingredients

  • gobbs vegetable oil
  • 1 ea chopped onion
  • ½ cup peanut butter
  • 6 cups cubed sweet potato
  • 1 tbsp ground cumin
  • ½ tsp black pepper
  • 1 tsp salt
  • 2 cans TJ garbanzo beans
  • 1 qt vegetable broth
  • 1 ea 28oz can diced tomatoes

Preparation

  1. Saute onions in oil till slightly browned
  2. Add remaining ingredients
  3. Bring to boil then simmer, uncovered, 30 minutes
