Ingredients

Boil Potatoes

Qty Ingredient
2 lbs russet potatoes sliced ½" pieces
8 cups cold water
1 tbsp salt
1 tsp smoked paprika
1 tsp cumin
2 ea bay leaves


Fried Potatoes Sauce

Qty Ingredient
1 cup mayonnaise
garlic to taste
pinch salt
1 tsp tomato paste
1-2 tbsp sherry vinegar
½ tsp smoked paprika
¼ tsp chipotle powder
pinch cayenne to taste


Fried potatoes seasoning

Qty Ingredient
2 tbsp salt
1 tsp black pepper
1 tsp smoked paprika
1 tsp chipotle powder
pinch chopped parsley

Preparation

  1. Simmer potatoes 10 minutes
  2. Spread potatoes in a single layer and allow to cool completely
  3. Crush sauce ingredients in mortar to a fine mush
  4. Heat 1½ inches olive oil till a single potato piece sizzles when dropped in, about 350℉
  5. Fry potatoes 5-6 minutes till golden brown and crunchy
  6. Season potates
  7. Top with sauce
