Golden Curried Split Pea Soup

2 tbsp | olive oil |
1 cup | finely chopped onion |
1 ea | 8 oz pkg mushrooms |
2-3 ea | cloves garlic, crushed or minced |
8 cups | vegetable stock or water |
1 lb | dried yellow split peas, rinsed |
1 cup | riced cauliflower |
2 ea | bay leaves |
2 tsp | curry powder or garam masala, more or less to taste |
1 tsp | freshly grated ginger |
1 tsp | salt |
Preparation
- Saute onion in olive oil over mid-low heat til golden.
- Add the remaining ingredients and bring to a boil.
- Lower to simmer, cover and cook 1½ hours, stirring occasionally.
- When the soup is done, adjust the consistency by adding water or stock.
