Golden Curried Split Pea Soup

2 tbsp olive oil
1 cup finely chopped onion
1 ea 8 oz pkg mushrooms
2-3 ea cloves garlic, crushed or minced
8 cups vegetable stock or water
1 lb dried yellow split peas, rinsed
1 cup riced cauliflower
2 ea bay leaves
2 tsp curry powder or garam masala, more or less to taste
1 tsp freshly grated ginger
1 tsp salt

Preparation

  1. Saute onion in olive oil over mid-low heat til golden.
  2. Add the remaining ingredients and bring to a boil.
  3. Lower to simmer, cover and cook 1½ hours, stirring occasionally.
  4. When the soup is done, adjust the consistency by adding water or stock.
