Maple Glazed Carrots


Ingredients

  • 1 tbsp butter
  • 2 ea- medium shallots or small onion
  • 6 ea or 1 lb medium carrots
  • ½ cup water
  • 2 tbsp maple syrup
  • pinch ground nutmeg
  • taste salt
  • 1 tbsp fresh parsley

Preparation

  1. Saute shallots or onion in butter til golden, about 4'
  2. Add remaining ingredients, cover and simmer 10'
  3. Un-cover, raise heat, cook till liquid thickened, about 3'-4'
