Spanish Lentil Stew

Ingredients

  • 2 tbsp extra virgin olive oil
  • ½ ea onion finely diced
  • ½ ea green bell pepper finely chopped
  • ½ ea red bell pepper finely chopped
  • 4 cloves garlic roughly minced
  • 1 tsp sweet smoked Spanish paprika
  • ½ cup tomato sauce
  • 1 cup uncooked brown lentils
  • 2 ea small potatoes cut into small ½ inch pieces
  • 1 ea carrot thinly sliced
  • 5 cups vegetable broth
  • 1 ea bay leaf
  • pinch sea salt
  • dash black pepper

Preparation

  1. Heat 2 tbsp olive oil in large deep fry pan or a stock pot at medium

  2. After 2 minutes mix in onion, green & red bell pepper and garlic

  3. Once all the vegetables are lightly sauteed, about 5 minutes, mix in sweet smoked paprika then add tomato sauce, raise the heat to a medium-high and simmer

  4. Meanwhile, clean and rinse the brown lentils,

  5. After simmering the tomato sauce 3 minutes and it has thickened up, mix in the lentils, potatoes, and carrot. Add in the vegetable broth and bay leaf and bring to a boil, then cover and set to a low heat. Simmer for 30 to 35 minutes or until the lentils are fully cooked through, then uncover and season with salt and pepper. Simmer for 1 to 2 more minutes

  6. Transfer the lentil stew into shallow bowls and sprinkle with finely chopped parsley, enjoy!
