Blueberry Pancakes


Makes 4-5 blueberry pancakes:

Dry ingredients

qty ingredient
1 cup white whole wheat flour
1 tsp sugar
¼ tsp salt
1 tsp baking powder
¼ tsp baking soda

Wet ingredients

qty ingredient
1 ¼ cups buttermilk (always shake the container first)
1 large egg
¼ tsp vanilla extract
1 tbsp+ unsalted butter to grease pan, and top pancakes

Preparation

  1. Mix dry ingredients in a bowl
  2. In a separate container, mix the wet ingredients
  3. Add the wet ingredients to the dry ingredients and stir till just mixed, no more
  4. Heat a skillet till a drop or 2 of water immediately boils off
  5. Drop the batter onto the skillet, about ¼ - 1/3 cup per pancake
