Yamitsuki (Addictive Cabbage)

1 pound Taiwanese flathead cabbage or Napa cabbage (about ½ cabbage) | |
Sea salt and pepper | |
2 ea | medium garlic cloves, smashed to a smooth paste |
2 tablespoons | toasted sesame oil |
1 tablespoon | untoasted sesame seeds |
Preparation
- Peel away damaged leaves and trim brown or oxidized bits, then halve and remove the solid white core
- Cut the leaves into 1 1/4 inch squares, slice thick parts into 1/4 inch thick pieces
- Wash and pat drty the cabbage, put in large bowl and sprinkle with 3 tbsp salt Crunch and scrunch and mix well with solt. Let sit for 10 minutes
- Whisk the garlic, sesame oil, 1/8 tsp salt and 1/4 tsp pepper in a bowl
- Cabbage should be slightly wilted and taste slightly salty, if not let sit another 10 minutes
- Rinse the cabbage pieces in a colandeer and drain
- Toss the salad and sprinkle in the sesame seeds. Mix well
- Best if eaten the same day, the garlic intensifies over time
