Yamitsuki (Addictive Cabbage)

Ingredients

1 pound Taiwanese flathead cabbage or Napa cabbage (about ½ cabbage)
Sea salt and pepper
2 ea medium garlic cloves, smashed to a smooth paste
2 tablespoons toasted sesame oil
1 tablespoon untoasted sesame seeds

Preparation

  1. Peel away damaged leaves and trim brown or oxidized bits, then halve and remove the solid white core
  2. Cut the leaves into 1 1/4 inch squares, slice thick parts into 1/4 inch thick pieces
  3. Wash and pat drty the cabbage, put in large bowl and sprinkle with 3 tbsp salt Crunch and scrunch and mix well with solt. Let sit for 10 minutes
  4. Whisk the garlic, sesame oil, 1/8 tsp salt and 1/4 tsp pepper in a bowl
  5. Cabbage should be slightly wilted and taste slightly salty, if not let sit another 10 minutes
  6. Rinse the cabbage pieces in a colandeer and drain
  7. Toss the salad and sprinkle in the sesame seeds. Mix well
  8. Best if eaten the same day, the garlic intensifies over time
