Roasted Butternut Squash Pasta


Ingredients

Roasted Squash

  • medium-small butternut squash
  • 2 tbsp olive oil
  • Salt

Pasta

  • 2 tbsp olive oil
  • 5+ garlic cloves
  • 1/4 - 1/2 cup chopped walnuts
  • salt & pepper
  • 1 lb whole wheat pasta

Preparation

  1. peel and cut squash into 1" cubes
  2. immerse squash in olive oil and salt
  3. bake at 400° for 20-30 minutes till squash is roasty and soft
  4. heat oil and add chopped walnets; cook till nuts slightly browned
  5. add garlic and saute till slightly browned
  6. boil water and cook pasta per instructions
