Roasted Beets


Ingredients

  • 4 medium beets, about 1 pound

Preparation

  1. Preheat oven to 400℉
  2. Trim all but the last inch of the beet stems
  3. Trim any dangling roots
  4. Wrap in aluminum foil
  5. Roast until toothpick easily glides through them, 1 to 1¼ hour
  6. Remove from oven, unwrap and discard foil, allow to cool slightly
  7. Rub beets gently with paper towels to rub off the skins
