Roasted Beets
Ingredients
- 4 medium beets, about 1 pound
Preparation
- Preheat oven to 400℉
- Trim all but the last inch of the beet stems
- Trim any dangling roots
- Wrap in aluminum foil
- Roast until toothpick easily glides through them, 1 to 1¼ hour
- Remove from oven, unwrap and discard foil, allow to cool slightly
- Rub beets gently with paper towels to rub off the skins
