Oaxacan Pasilla Salsa

1 - 2 Oaxacan pasilla chile, stemmed, seeded and torn to small pieces
~ 4 ea medium tomatillos, husked, rinsed and halved at the equator
3 ea garlic cloves, peeled
½ tsp Salt

Preparation

  1. Soak the chili pieces 20' in a small bowl covered in hot tap water.
  2. Blend the chili pieces in about ⅓ of the soaking liquid.
  3. Brown the tomatillos, starting cut side down, and the garlic in a large skillet 3-4 minutes at medium to medium-high heat. then flip and brown other side. The tomatillos should be soft.
  4. Blend the garlic with the chiles until smooth.
  5. Add the tomatillos and blend to a coarse puree.
  6. Pour into a bowl and add water to the desired thickness.
  7. Add the salt
