Oaxacan Pasilla Salsa

1 - 2 | Oaxacan pasilla chile, stemmed, seeded and torn to small pieces |
~ 4 ea | medium tomatillos, husked, rinsed and halved at the equator |
3 ea | garlic cloves, peeled |
½ tsp | Salt |
Preparation
- Soak the chili pieces 20' in a small bowl covered in hot tap water.
- Blend the chili pieces in about ⅓ of the soaking liquid.
- Brown the tomatillos, starting cut side down, and the garlic in a large skillet 3-4 minutes at medium to medium-high heat. then flip and brown other side. The tomatillos should be soft.
- Blend the garlic with the chiles until smooth.
- Add the tomatillos and blend to a coarse puree.
- Pour into a bowl and add water to the desired thickness.
- Add the salt
