Ingredients

Qty Ingredient
1 ea 1 lb large purple onion, quarted and thinly sliced
20 ea peppercorns
½ tsp oregano
4 cloves garlic, peeled and pressed
1 tsp salt
1½ cup mild white vinegar
1 ea chile de arbol

Preparation

  1. Mix together all ingredients except the onion in a 1 quart jar until the salt is dissolved
  2. Add the onion to the jar
  3. Top with cold water
  4. Set aside in a cool place for at least 2 days
