Roasted Russet Potatoes

4 ea | large russet potatoes |
lots | pepper, salt, cayenne pepper |
¼ cup | olive oil |
2 tsp | lemon zest |
2 ea | juice of lemons |
Preparation
- place the potatoes flat, slice off from each long side so the potato may lay flat on it
- slice the potatoes in half lengthwise down the middle
- shake a generous layer of salt, pepper, cayenne pepper on each side but don't over salt
- add ¼ cup olive oil to a baking dish and lay potatoes in, larger side down
- add 1 cup vegetable stock, lemon zest, lemon juice and bake at 400℉ 20 minutes
- turn over large side up and bake at 400℉ 15 minutes
- turn potatoes over large side down and bake until a knife easily pierces through the potatoes, about 30-45 minutes
