Roasted Russet Potatoes

Ingredients

4 ea large russet potatoes
lots pepper, salt, cayenne pepper
¼ cup olive oil
2 tsp lemon zest
2 ea juice of lemons

Preparation

  1. place the potatoes flat, slice off from each long side so the potato may lay flat on it
  2. slice the potatoes in half lengthwise down the middle
  3. shake a generous layer of salt, pepper, cayenne pepper on each side but don't over salt
  4. add ¼ cup olive oil to a baking dish and lay potatoes in, larger side down
  5. add 1 cup vegetable stock, lemon zest, lemon juice and bake at 400℉ 20 minutes
  6. turn over large side up and bake at 400℉ 15 minutes
  7. turn potatoes over large side down and bake until a knife easily pierces through the potatoes, about 30-45 minutes
  8. enjoy!
