Roasted Whole Cauliflower


Ingredients

  • 1 ea whole cauliflower head
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp salt

Preparation

  1. Preheat the oven to 400ºF, make sure oven rack is 4-6" from heating element
  2. Remove the leaves on the bottom and slice the core flat, so that the cauliflower will stand up evenly
  3. Mix oil, garlic powder and salt. Brush completely with olive oil mixture to hold in moisture
  4. Pour ¼ cup of water into the bottom of a pan, put in cauliflower
  5. Roast for at least 60 minutes until browned on top and tender

Estimated Cooking Times

  • 2 pound cauliflower: 1 hour
  • 2½ pound cauliflower: 1 hour 15 minutes
  • 3 pound cauliflower: 1 hour 30 minutes
