Roasted Whole Cauliflower
Ingredients
- 1 ea whole cauliflower head
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp salt
Preparation
- Preheat the oven to 400ºF, make sure oven rack is 4-6" from heating element
- Remove the leaves on the bottom and slice the core flat, so that the cauliflower will stand up evenly
- Mix oil, garlic powder and salt. Brush completely with olive oil mixture to hold in moisture
- Pour ¼ cup of water into the bottom of a pan, put in cauliflower
- Roast for at least 60 minutes until browned on top and tender

- 2 pound cauliflower: 1 hour
- 2½ pound cauliflower: 1 hour 15 minutes
- 3 pound cauliflower: 1 hour 30 minutes
