**Carmelized Spiced Nuts **


Ingredients

2 tbsp good-quality vegetable oil
2 cups sugar
2 tsp garam masala
½ tsp cayenne
1 tsp salt
2 cups (~ 1 lb) unsalted shelled nuts

Preparation

  1. Heat the oven to 450°F. Grease a baking sheet with the oil.
  2. Put sugar in 2 cups water and bring to a boil
  3. Stir in the garam masala, cayenne, salt, and nuts.
  4. Reduce the heat to medium and cook, stirring frequently, until the liquid is reduced to a syrup, 5 to 10 minutes.
  5. Turn the heat to low and remove the nuts with a slotted spoon and spread on the baking sheet. Turn off the burner when finished.
  6. Roast the nuts for 10 minutes, tossing once or twice with a spatula.
  7. Remove from the oven and let cool for a few minutes until the sugar coating hardens.
  8. Serve or store in an airtight container at room temperature for 2 or 3 days.

Rosemary Caramelized Nuts

Substitute 1 tablespoon minced fresh rosemary for the garam masala.

Curried Caramelized Nuts

Substitute 1 tablespoon curry powder for the garam masala.
