Leek, Ricotta and Walnut Pizza

Ingredients

1 lb Whole wheat pizza dough
1 tbsp cornmeal
1 tbsp olive oil
4 cups leeks, thinly sliced
½ cup ricotta cheese
¼ cup grated parmesan cheese
¼ tsp salt
¼ tsp pepper
1 ea garlic clove, minced
2 tbsp walnuts, coarsely chopped

Preparation

  1. Roll out the dough on a lightly floured surface
  2. Saute the leeks in the olive till almost carmelized, cool to room temperature
  3. Combine cheeses, salt, pepper and garlic in a bowl then spread onto the dough
  4. Top with the leeks then sprinkle over with the walnuts
  5. Bake at 450℉ for 10 minutes or so, 15 minutes max
