Spanish Tortilla de Patata


Ingredients

  • ½ L olive oil
  • 1 onion, thinly sliced
  • 3 potatoes, thinly sliced
  • 6 eggs, lightly beaten

Preparation

  1. to a really hot pan add all the ingredients
  2. cook 10-15 minutes stirring 2-3 times
  3. when lightly carmelized remove potatoes from oil
  4. to the beaten eggs, add the potato onion mixture
  5. add a decent shaking of salt, cover and let rest 15-20 minutes
  6. to a hot non-stick pan add the egg potato onion mixture for 1 minute
  7. lower heat and cook 2-3 minutes
  8. plate flip the tortilla and perform the last 2 steps on the 2nd side
  9. the tortilla is done when a touch to the top bounces back up (or toothpick it)
