Spanish Tortilla de Patata
Ingredients
- ½ L olive oil
- 1 onion, thinly sliced
- 3 potatoes, thinly sliced
- 6 eggs, lightly beaten
Preparation
- to a really hot pan add all the ingredients
- cook 10-15 minutes stirring 2-3 times
- when lightly carmelized remove potatoes from oil
- to the beaten eggs, add the potato onion mixture
- add a decent shaking of salt, cover and let rest 15-20 minutes
- to a hot non-stick pan add the egg potato onion mixture for 1 minute
- lower heat and cook 2-3 minutes
- plate flip the tortilla and perform the last 2 steps on the 2nd side
- the tortilla is done when a touch to the top bounces back up (or toothpick it)
