Jackfruit Gebhardt Chili


Ingredients

  • 2 20 oz cans TJ green jackfruit
  • 2 tbsp olive oil
  • 1 whole chopped onion
  • 1 clove garlic, minced
  • 1 29-oz can diced tomatoes
  • 1 tablespoon Gebhardt's chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1 15-oz can pinto beans

Preparation

  1. shred the jackfruit to resemble shredded chicken
  2. bake the jackfruit 30 min at 375 degrees
  3. brown onions in olive oil
  4. add garlic and brown a minute more
  5. add tomatoes, baked jackfruit, spices
  6. simmer for 20 minutes, stirring occasionally
  7. add pinto beans, continue heating till warmed through
