Jackfruit Gebhardt Chili
Ingredients
- 2 20 oz cans TJ green jackfruit
- 2 tbsp olive oil
- 1 whole chopped onion
- 1 clove garlic, minced
- 1 29-oz can diced tomatoes
- 1 tablespoon Gebhardt's chili powder
- 2 teaspoons ground cumin
- 1 teaspoon salt
- 1 15-oz can pinto beans
Preparation
- shred the jackfruit to resemble shredded chicken
- bake the jackfruit 30 min at 375 degrees
- brown onions in olive oil
- add garlic and brown a minute more
- add tomatoes, baked jackfruit, spices
- simmer for 20 minutes, stirring occasionally
- add pinto beans, continue heating till warmed through
