Baked Stuffed Acorn Squash


Ingredients

Qty Ingredient
1 ea Acorn Squash cut vertically in half and seeded
½ medium Yellow Onion
2 medium Apples
¼ cup Nuts
¼ cup Cranberries or Raisins
½ cup Cheese
Thyme/Sage or other herbs
Butter
2 pinches Nutmeg

Preparation

  1. Brush melted butter on squash halves and sprinkle with black pepper
  2. Bake at 400℉ for 40-60 minutes depending on size
  3. Saute onion in 2 tbsp butter and herbs till golden brown
  4. Peel apples and cut into small pieces and add to nearly carmelized onion, cook till soft
  5. Add berries and nutmeg
  6. When squash is golden brown remove from oven and cut out from center to make opening larger
  7. Add cut out squash to onion mixture together with nuts and cheese
  8. Stuff mixture into squash
  9. Optionally top with additional cheese
