Memphis Style Sweet Potato Pudding


Ingredients

  • 2 lb sweet potatoes in 1" cubes
  • 1 cup ground pecans
  • ½ cup butter
  • ⅓ cup packed brown or maple sugar
  • ¼ tsp grated nutmeg

Preparation

  1. Preheat oven to 350℉
  2. Boil potatoes for 20' or till fork tender; drain & place in 2qt casserole
  3. Mix pecans, butter, sugar and spoon mixture on potatoes
