Memphis Style Sweet Potato Pudding
Ingredients
- 2 lb sweet potatoes in 1" cubes
- 1 cup ground pecans
- ½ cup butter
- ⅓ cup packed brown or maple sugar
- ¼ tsp grated nutmeg
Preparation
- Preheat oven to 350℉
- Boil potatoes for 20' or till fork tender; drain & place in 2qt casserole
- Mix pecans, butter, sugar and spoon mixture on potatoes
