Pan Roasted Chickpeas with Creamy Garlic Sauce


Ingredients

  • 1 clove garlic
  • 1 tsp lemon juice
  • 1 tbsp oat milk
  • 1 15oz can cooked chickpeas, drained & rinsed
  • 1 tbsp extra virgin olive oil
  • 1 tsp sweet smoked paprika
  • 1/2 tsp cumin powder
  • 1/4 cup plain hummus
  • sea salt
  • black pepper

Preparation

Garlic Sauce

  1. Add a 1/4 cup of plain hummus into a bowl,
  2. Shred in 1 large clove of garlic, 1 tsp fresh lemon juice, 1 tbsp oat milk and season with sea salt & black pepper, whisk together until well combined

Chickpeas

  1. heat a large nonstick fry pan with a medium heat
  2. Add in chickpeas, olive oil, paprika, cumin powder
  3. Season with sea salt & black pepper
  4. Pan fry between 4 to 5 minutes, then transfer to a shallow bowl,
