Hoppin' Juan
Ingredients

| ⅛ cup | olive oil |
| 1 pkg | Tofurkey italian sausage, sliced |
| 1 ½ cups | short grain brown rice |
| 1 ½ cups | celery stalks, chopped |
| 1 ½ cups | medium-size yellow onion, chopped |
| ½ ea | red bell pepper, chopped |
| 3-4 cloves | garlic, chopped |
| 4 cups | vegetable broth |
| 1 ea | 15 oz can black beans |
| 1 tsp | dried thyme |
| ½ tsp | black pepper |
| ½ tsp | smoked hot paprika |
| 1 tsp | salt |
| fresh scallions, sliced |
Preparation
- Pre-heat oil at medium heat in a large frying pan then add the italian sausage slices and brown
- Add the rice, celery, onion and bell pepper. Saute till the onions are transparent
- Add the garlic and saute till aromatic, about 30'
- Add the beans and broth
- Mix in the thyme, pepper, paprika and salt till disolved
- Bring to a boil then lower to a simmer, let go 15' or so then adjust heat to a simmer again
- After 45' or so monitor each 5' or so till rice is at desired consistency
- Top with fresh scallion and serve. Enjoy!
