Cinnamon Chile Roasted Sweet Potatoes

| 1/4 cup | olive oil, plus more for greasing pan |
| 2 tbsp | butter, melted |
| 12 cups | sweet potatoes, peeled and cubed |
| sour cream, for serving |

| 1 tbsp | ground cinnamon |
| 2 tsp | ground cumin |
| 2 tsp | ground paprika (smoked or sweet) |
| 2 tsp | sea or kosher salt |
| 1/2 tsp | black pepper |
| pinch or two of ground cayenne pepper (or more if you want it spicy) |
Preparation
- place butter in a cup with oil and nuke 30 seconds
- mix potatoes with butter/oil solution
- mix spices together and shake over potatoes, tossing them occasionally
- bake 25-35 minutes at 400°
