Wild Mushroom Sauce
Makes 3 cups
Ingredients
| Qty | Ingredient |

| 2 tbsp | butter |
| 2 tbsp | flour |
| 3 cups | wild mushroom stock |
| 3 tbsp | tomato sauce |
| 4 tbsp | cream or creme fraiche (optional) |
| taste | salt and pepper |
Preparation
- Melt butter in sauce pan then stir in flour and cook 2 minutes
- Boil mushroom stock then whisk into cooled roux
- Stir in the tomato and cream and season with salt and pepper
- Simmer on low stirring frequently 20-25 minutes
