Fried Potatoes Sauce

| 1 tsp | tomato paste |
| 1-2 tbsp | sherry vinegar |
| ½ tsp | smoked paprika |
| ¼ tsp | chipotle powder |

Fried potatoes seasoning

| 1 tsp | black pepper |
| 1 tsp | smoked paprika |
| 1 tsp | chipotle powder |
| pinch | chopped parsley |
Preparation
- Simmer potatoes 10 minutes
- Spread potatoes in a single layer and allow to cool completely
- Crush sauce ingredients in mortar to a fine mush
- Heat 1½ inches olive oil till a single potato piece sizzles when dropped in, about 350℉
- Fry potatoes 5-6 minutes till golden brown and crunchy
- Season potates
- Top with sauce
