Roasted Butternut Squash Pasta
Ingredients
Roasted Squash
- medium-small butternut squash
 - 2 tbsp olive oil
 - Salt
 
Pasta
- 2 tbsp olive oil
 - 5+ garlic cloves
 - 1/4 - 1/2 cup chopped walnuts
 - salt & pepper
 - 1 lb whole wheat pasta
 
Preparation
- peel and cut squash into 1" cubes
 - immerse squash in olive oil and salt
 - bake at 400° for 20-30 minutes till squash is roasty and soft
 - heat oil and add chopped walnets; cook till nuts slightly browned
 - add garlic and saute till slightly browned
 - boil water and cook pasta per instructions
