Red Cabbage Soup

Ingredients

| 1 lb | TJ meatless ground beef |
| 1 cup | diced red onion (about 1/2 onion) |
| 1 cup | chopped carrot (about 3-4 carrots) |
| 4 cloves | garlic, minced |
| 4 cups | coarsely chopped red cabbage (about 1/2 standard sized) |
| 4 cups | TJ vegetable broth |
| 2 cups | water |
| 1 ea | (15 ounce) can pinto beans, rinsed and drained |
| 1 ea | (6 ounce) can tomato paste |
| 2 tsp | salt |
| 1 tsp | ground cumin |
| 1 tsp | ground black pepper |
Preparation
- Saute the onion and carrots in olive or avocado oil until translucent, about 5 minutes
- Add the garlic and saute till fragrang, about 30 seconds or so
- Add cabbage, broth, water, pinto beans, tomato paste, salt, cumin, and pepper.
- Bring to a boil, then reduce the heat, cover, and simmer until the cabbage has softened substantially, about 1/2 hour.
- Add the meatless ground beef and simmer till heated through, about 5 minutes
- Enjoy!
