Leek, Ricotta and Walnut Pizza

Ingredients

| 1 lb | Whole wheat pizza dough |
| 1 tbsp | cornmeal |
| 1 tbsp | olive oil |
| 4 cups | leeks, thinly sliced |
| ½ cup | ricotta cheese |
| ¼ cup | grated parmesan cheese |
| ¼ tsp | salt |
| ¼ tsp | pepper |
| 1 ea | garlic clove, minced |
| 2 tbsp | walnuts, coarsely chopped |
Preparation
- Roll out the dough on a lightly floured surface
- Saute the leeks in the olive till almost carmelized, cool to room temperature
- Combine cheeses, salt, pepper and garlic in a bowl then spread onto the dough
- Top with the leeks then sprinkle over with the walnuts
- Bake at 450℉ for 10 minutes or so, 15 minutes max
