Ingredients

| 1 ea | 1 lb large purple onion, quarted and thinly sliced |
| 20 ea | peppercorns |
| ½ tsp | oregano |
| 4 cloves | garlic, peeled and pressed |
| 1 tsp | salt |
| 1½ cup | mild white vinegar |
| 1 ea | chile de arbol |
Preparation
- Mix together all ingredients except the onion in a 1 quart jar until the salt is dissolved
- Add the onion to the jar
- Top with cold water
- Set aside in a cool place for at least 2 days
