Blueberry Pancakes
Makes 4-5 blueberry pancakes:
Dry ingredients

| 1 cup | white whole wheat flour |
| 1 tsp | sugar |
| ¼ tsp | salt |
| 1 tsp | baking powder |
| ¼ tsp | baking soda |
Wet ingredients
| qty | ingredient |
|---|---|
| 1 ¼ cups | buttermilk (always shake the container first) |
| 1 large | egg |
| ¼ tsp | vanilla extract |
| 1 tbsp+ | unsalted butter to grease pan, and top pancakes |
Preparation
- Mix dry ingredients in a bowl
- In a separate container, mix the wet ingredients
- Add the wet ingredients to the dry ingredients and stir till just mixed, no more
- Heat a skillet till a drop or 2 of water immediately boils off
- Drop the batter onto the skillet, about ¼ - 1/3 cup per pancake
