Baked Stuffed Acorn Squash
Ingredients

| 1 ea | Acorn Squash cut vertically in half and seeded |
| ½ medium | Yellow Onion |
| 2 medium | Apples |
| ¼ cup | Nuts |
| ¼ cup | Cranberries or Raisins |
| ½ cup | Cheese |
| Thyme/Sage or other herbs | |
| Butter | |
| 2 pinches | Nutmeg |
Preparation
- Brush melted butter on squash halves and sprinkle with black pepper
- Bake at 400℉ for 40-60 minutes depending on size
- Saute onion in 2 tbsp butter and herbs till golden brown
- Peel apples and cut into small pieces and add to nearly carmelized onion, cook till soft
- Add berries and nutmeg
- When squash is golden brown remove from oven and cut out from center to make opening larger
- Add cut out squash to onion mixture together with nuts and cheese
- Stuff mixture into squash
- Optionally top with additional cheese
